From Ingredient Preparation to Consistent Quality

Outstanding aerated products start with the right preparation. In Shuffle‑Mix production concepts, liquid and semi‑liquid ingredients can be first mixed and homogenized to create a uniform base with consistent viscosity and composition. This controlled preparation is essential for stable aeration and reproducible product quality, especially for recipes containing fats, sugars or emulsified components. 

For advanced dessert applications such as mousses and cream‑based fillings, or biscuit and sponge production, Shuffle‑Mix systems can be equipped with ingredient injection units. These systems allow additional components – such as flavors, gelling agents, chocolates, fruit-compotes or functional ingredients – to be injected accurately into the product stream. Depending on the recipe requirements, injected ingredients can be temperature‑controlled, offering flexibility for a wide range of formulations.

Perforated discs move vertically inside mixing tubes, gently processing the product while air or nitrogen is injected with high precision. The aeration process introduces minimal additional heat, helping to preserve delicate textures, improve stability and extend shelf life. In many applications, aeration can be performed without active cooling, contributing to an energy‑efficient and product‑friendly process. 

Shufflemixers are designed to handle capacities ranging from 20 up to 1,000 kilograms per hour, making them suitable for both small‑scale craft production and high‑output industrial environments. Because the process operates continuously, production parameters can be adjusted during operation, with changes becoming visible within minutes.
