IFF – a global provider of flavours, fragrances, food ingredients and health & biosciences – announced the launch of DANISCO®  GRINDSTED® DuoGel, a stabiliser system designed to close the texture gap between plant-based and traditional gummies, in Europe, the Middle East and Africa (EMEA).

“The confectionery market across EMEA is growing quickly and has already shifted toward plant-based, but texture has remained a barrier,” said Elisa Vimercati, vice president of systems and locust bean gum for IFF Food Ingredients. “With GRINDSTED® DuoGel, we’re introducing a first‑of‑its‑kind solution in the region that enables manufacturers to deliver the indulgent eating experience consumers expect in fruit-based or fruit-flavored gummies.”

Developed specifically for low-pH, fruit-based gummies, GRINDSTED® DuoGel addresses one of the key manufacturing challenges in plant-based confectionery: recreating a juicy, satisfying bite comparable to traditional gummies with fruit juice or fruity flavor profiles. Current gelatin-free formulations often produce a short, brittle bite or an overly dense, sticky chew. GRINDSTED® DuoGel is a synergistic system of two hydrocolloids — pectin and carrageenan — that delivers an elastic, chewy texture that is difficult to achieve with a single ingredient.

“GRINDSTED® DuoGel represents a step change for plant-based confectionery,” said Linda Friis, vice president of applications, EMEA for IFF Food Ingredients. “It delivers consistent texture and allows easier implementation on existing production lines, giving manufacturers the confidence to innovate and scale quickly.”

Studies conducted by IFF show that gummies formulated with GRINDSTED® DuoGel deliver improved melt resistance and reduced surface stickiness in warmer conditions, enabling reliable distribution in hot climates. The solution is halal-certified and supports plant-based and vegan-suitable claims, giving manufacturers greater flexibility in product positioning.

A groundbreaking food ingredient innovation for EMEA, GRINDSTED® DuoGel enables manufacturers to deliver plant-based gummies that meet technical demands and delight consumers with every bite. For more information, visit https://www.iff.com/food-beverage/food-ingredients/system-blends/duogel/
