Willy van Arkel-van Arendonk, Product Management & Business Development Director, Corbion, explains how buffered acid systems improve efficiency, flavour control and stability in confectionery

In today’s confectionery market, manufacturers are balancing increasing complexity with the need for operational efficiency. Product portfolios continue to expand, driven by consumer demand for novel taste experiences, particularly in sour and fruit-flavoured segments. At the same time, producers are under pressure to optimise production, reduce waste and maintain consistent quality across regions and distribution channels.

Confectionery producers are increasingly combining innovation with value engineering, rethinking formulation strategies to support both new product development and efficient processing. One area gaining attention is the use of buffered acid systems, which offer a more controlled and efficient approach to managing acidity, flavour delivery and product stability.

Buffered Acids

Buffered acids, such as those based on lactic and citric acid systems, provide more than pH regulation. They enable a more stable acidification process, reducing variability during production and helping to ensure consistent results across batches, while delivering both sourness and stability.  This is particularly relevant in high-throughput environments, where even small deviations can lead to rework, waste or downtime.

From a processing perspective, buffered systems can simplify operations. This reduces the need for multiple acid additions and minimises manual adjustments during production. This not only improves line efficiency but also supports more standardised processes across different manufacturing sites.

Flavour performance is another critical consideration. In sour confectionery, achieving the right balance between intensity and taste quality is essential. Buffered systems allow manufacturers to increase perceived sourness while maintaining taste quality. This is especially important as consumers increasingly associate sour products with both intensity and enjoyment.

In addition, buffered solutions offer greater flexibility in formulation. Manufacturers can adjust sourness levels more precisely, enabling faster adaptation to regional preferences or seasonal launches without the need for extensive reformulation. This agility is particularly valuable in a category where innovation cycles are short and product differentiation is key.

Stability over shelf life remains a central concern, especially for products distributed across diverse climates. Buffered systems help maintain consistent pH and limit unwanted reactions such as sugar inversion, which can impact texture, appearance and overall product quality. By improving predictability, they contribute to more reliable shelf-life performance and reduced product losses.

Predictive Tools

To further support formulation decisions, predictive tools are becoming an important part of the development process. Digital solutions, such as Corbion® Sourness and Stability Calculator, enable manufacturers to model the impact of different acid systems on flavour intensity and product stability. This allows R&D teams to make more informed choices early in development, reducing trial-and-error and accelerating time to market.

As the confectionery sector continues to evolve, the ability to combine formulation control with process efficiency will be a key differentiator. Buffered acid systems, supported by predictive modelling, offer a practical pathway to achieve both. By improving consistency, enabling flavour precision and supporting operational efficiency, they help manufacturers stay competitive in an increasingly dynamic market.
