Italian chocolate producer Domori has introduced its professional couverture chocolate range to the UK, targeting chocolatiers, pastry chefs, gelato makers and other specialist dessert producers.

Known particularly for its use of rare Venezuelan Criollo cocoa, Domori’s professional portfolio includes couverture chocolates, cocoa mass, blends and cream fillings designed for a range of confectionery, pastry and frozen dessert applications.

UK distribution partnership

The launch is being supported by CFW Ingredients & Equipment, the distribution division of Sephra Europe, which has created a dedicated B2B e-commerce platform for the range.

CFW is distributing 20 Domori products in the UK, including Criollo chocolates, single-origin couvertures, signature blends and spreads. The service includes next-day UK delivery, free delivery on orders above £150 and no minimum order quantity, allowing smaller confectionery and dessert businesses to trial the products.

Among the Criollo lines are Chuao 75%, Ocumare 72% and Canoabo 62%. Single-origin milk and dark chocolates are also available using cocoa sourced from countries including Peru, Ecuador, Venezuela, Ivory Coast, Madagascar and Tanzania.

Range targets professional applications

Domori’s Essence range includes 70% dark, 57% dark, 37% milk and white chocolate, with four-drop fluidity intended to support a variety of everyday professional applications.

The portfolio also includes 100% cocoa mass for confectionery, pastry, ice cream and gelato production, alongside Aurea cream fillings in Sicilian pistachio and Italian hazelnut varieties.

Alessandro Crespi, Head of Sales UK & Ireland at IRCA Group, said the UK introduction would give professional users greater access to Domori products for both everyday recipes and higher-end dessert applications.
