When it concerns new production systems in the confectionery industry, energy saving is one of the most important factors of today. This requires science and innovation – and the CHOCOTECH team has embraced this challenge from the very beginning. Hard and soft candy
There are different processes for manufacturing hard candy products – the success of the production depends on various factors. Precise PLC-controlled monitoring of the process and system parameters, for example weighing, mixing process, temperature and flow rates, is essential for sustainable product quality.
Precise control of the cooking temperature, shearing, dwell time and, if necessary, aeration for recrystallisation also plays a key role in the production of soft candy products and has a direct influence on the product quality.

Part of SOLLICH KG since 1992, with headquarters in Wernigerode and representatives all over the world, the experienced candy experts offer solutions for candy masses such as jellies, chewy candies, hard candies, caramel, fondant, aerated candy masses, laminated candies, Halva as well as OTC soft and hard candies.
Hard candy production – an insight into the portfolio
The SUCROMASTER®, specially developed for the production of various hard candy products, is equipped with a special screw discharge system that enables a high vacuum and minimum dwell time, thus guaranteeing low inversion. The patented ECOGRAV® system for flexible, gravimetric weighing is particularly energy-saving. It is equipped with an integrated pressure dissolver that uses the moisture in the glucose to dissolve the sugar. This significantly reduces the amount of drinking water required, resulting in energy savings of up to 70%, depending on the recipe. These are just some of the systems for hard candy production – the CHOCOTECH portfolio covers the entire production chain.
Systems for soft candy production
CHOCOTECH also offers comprehensive systems for all working steps in the soft candy production. For example, the CHEWMASTER®, a system for the continuous crystallisation of sugar-containing and sugar-free masses, allows the degree of crystallisation of the mass to be individually adjusted.
The SUCROFILM®, a universal, hygienic thin-film cooker, is characterised by its compact design and excellent heat exchange qualities for the continuous processing of different masses and guarantees interrupt-free production over several days.
