Simon will be presenting on the topic “Raising the Game with a Dough Strengthener Enzyme to Overcome Challenges and Create Opportunities.” The confectionery industry, much like the broader food sector, is navigating the complexities of rising production costs and a fluctuating global economy. While there are signs of stabilisation in 2024, challenges such as tight margins and high input costs continue to impact businesses. In this session, Simon will explore how innovative enzyme solutions can address these ongoing challenges and unlock new opportunities. With increasing demand for clean label products and a growing focus on sustainability, Simon will provide valuable insights into how confectionery businesses can leverage these trends to strengthen their market position.
With over 12 years of experience in the Chemical and Biotech sectors, Simon has focused on process optimisation and resource conservation. He began his career as a production engineer in the UK’s speciality chemical industry before moving into commercial roles with Dow Chemical and Dupont across Europe. Originally from the Channel Islands, Simon’s passion for sustainability has been a key driver in his leadership of IFF’s Food Enzymes business, where he has made significant contributions to promoting more sustainable industry practices. As a leader, Simon is committed to challenging traditional approaches and advancing the role of enzymes in creating a more sustainable future.
