William Angleys is the Sales Director of the global cacaofruit expert Cabosse Naturals, a brand by Barry Callebaut. Angleys has over 12 years of experience in Sales and Business Development at various Food & Beverage companies such as International Flavors & Fragrances, Frutarom and Naturex, before joining Barry Callebaut in 2021.
William spoke at the second edition of Confectionery Live in June 2023 where he talked to Editor Caitlin Gittins about the drive to set up Barry Callebaut brand Cabosse Naturals in 2019 and upcycle cacaofruit to create additional income sidestreams for cocoa farmers and reduce food waste at the source.
The utilisation of cacaofruit into ingredients to be used in chocolate and beverages including fruit drinks and beer, has been growing in popularity in recent years as it offers one solution to reducing crop waste and creating an innovative product with a sustainability story that appeals to consumers.
In his session at this year’s Confectionery Live, William will discuss how the different ingredient solutions are driving the impact on chocolate as a category and upcycling. He will also provide examples of launches and how upcycled cacaofruit ingredients are being brought to market by businesses.
