In her sessions ‘Center in Shell’ and ‘Vegan Aeration’ Janne Van Rangelrooij, Food Technologist at Tanis will be discussing the value of centre filled gummies as well as the process control points such as ensuring the viscosity and density of the centre is as desired, in addition to discussing a growing trend in the confectionery industry; providing vegan and plant-based options by exploring vegan aeration, its challenges and technical considerations.

Finishing off these impactful sessions is Manon Kerremans, Manager Innovation Center at Tanis, who will be discussing ‘Future of starch’, looking at starch through an energy efficient lens as the cost of energy becomes a growing concern for candy producers and exploring the growing popularity of non-starch technologies and the role they have to play.
